Baking Challenge

Ok Chrissy, this one's for you *wink*

Baklava Fingers

Filling ¾ cup finely chopped walnuts

1 tablespoon brown sugar

1 teaspoon cinnamon

20g melted butter


8 sheets filo pastry

50g melted butter

Syrup

1 cup sugar

½ cup water

2 tablespoons honey

2 teaspoons orange flower water (optional)

1.Preheat oven to 210˚C, line one baking tray with baking paper and set aside.

2.To make filling place all ingredients in a small bowl and stir until combined.

3.Working with one sheet of pastry at a time, lay sheet on workbench brush with melted butter then fold in half. Cut into three strips and place a teaspoon of filling on each close to the bottom edge of the pastry. Roll up tucking in the sides so as to encase the filling. Place on prepared tray.

4.Repeat with remaining pastry and bake for 10-15 minutes or until golden. Transfer to wire rack over a tray and brush liberally with syrup while both are still warm. 5.To make syrup combine all ingredients in small pan and stir over low heat until completely dissolved. Reduce heat and simmer for 5 minutes, remove from heat and add orange water if desired.

Note: To roll, I place the filling close to the bottom for the pastry, folded the sides all the way up and then rolled the pastry all the way up.

I made this for the first time a couple of weeks ago and WE LURVE them!!! I havent seen it anywhere to buy at cafes or anything here in Mt Isa so i'm glad i had a go and made it myself!

    Had a go at them this morning, but wasn't sure how much of the syrup was meant to soak in (the inside of mine seems a bit dry). Everybody seemed to like them anyway.
